Chocolate-covered popcorn is a no-brainer it satisfies a hunger for a crunchy snack while also serving as a dessert. However, this gourmet product is not generally inexpensive. Make some popcorn
Over medium heat, add a thin coating of vegetable oil to a big saucepan. Fill the kettle with kernels (half a cup of kernels yields approximately 16 cups of popcorn). Combine two to three teaspoons of white or brown sugar with the oil to make kettle corn. Lift the saucepan off the heat and cover with a lid. To protect the kernels from burning, shake the pot often.
Remove the saucepan from the burner when the popping sound reduces to two- to three-second intervals. Allow the popcorn to cool in a large mixing basin. Stir occasionally to break up any clumps in the sweetened kettle corn.
The chocolate should be melted
Fill a saucepan halfway with water and set it over medium heat. Allow the water to come to a simmer but do not allow it to boil. In a separate, dry glass or metal dish, combine 1.5 to 34 cup finely chopped dark, milk, or chocolate pieces or chocolate melts.
Place the dry bowl with the chocolate morsels in the saucepan of boiling water on the burner. Gently whisk the chocolate until it is halfway melted. Remove from the fire and continue to whisk until the chocolate is completely melted.
Instead of the double-boiler method described above, you can melt the chocolate in a microwave at 50% power. In a non-glass microwave-safe dish, microwave the chocolate for 30 seconds at a time. Repeat the procedure until the chocolate is creamy and smooth. It is critical to stir the chocolate at regular intervals to keep it from burning and to ensure that it melts smoothly and evenly. Drizzle the chocolate over everything
Pour the melted chocolate over the cooled popcorn and gently stir together with a dry mixing spoon. Cut one or more sheets of parchment paper to fit the popcorn. Spread out the chocolate-coated popcorn in a single layer on the parchment paper. Let the popcorn cool and solidify at room temperature.
